Salmon with Sweet Potato & Asparagus

I love salmon, it is such a great way to get all your Omega 3’s in a fairly quick and convenient way and not to mention salmon is a super-food!
I love to bake salmon when cooking, as when you grill salmon it will tend to stink out your whole house, unless you grill on the BBQ. Baking salmon is very healthy as you do not need to use any oils when cooking, the salmons own oils are sufficient enough. All you need to do is line to a baking tray with some baking paper, place the salmon on the tray and in the oven and cook for 10-15 minutes (depending on the size of the salmon) on 200C (390F). Here is a yummy salmon recipe that I am sure the whole family will enjoy.

Serves 2
2 skinless salmon fillet
Dash of pepper for taste
1 large sweet potatoes, peeled and cut into 1 inch chunks
1 Tb chopped fresh tarragon leaves
1 1/2 tsp red wine vinegar
1 tsp Dijon-style mustard
6 Asparagus stalks

Sprinkle salmon with pepper to taste.
Please both pieces of salmon on baking tray lined with baking paper
Bake in the oven for 10-15 minutes (depending the size of the salmon) on 200C (390F)
Add sweet potatoes and 1/2 cup water to a heated pan
Cook the sweet potato over medium heat, stirring frequently, until tender for about 10 minutes. remove to a medium bowl
Add the asparagus with 4 minutes to go
Add tarragon, vinegar, mustard, a dash of pepper, and 3 Tb water
Divide sweet potato mixture over each piece of the salmon
